Gorgeously fruited and fragrant, the wine shows Black Doris plum, dark cherry, olive and roasted nut characters on the nose with a hint of violet. Technical Notes
Hand-harvested in the Moutere by the St Pauli team and handled in barrel. To protect the delicate flavours the grapes were hand-picked early in the morning and kept in a cold store for greater than 24 hours before being gently destemmed; retaining as much of the grapes skins to build herbaceous flavours and rich colour. The destemmed grapes are left to ferment with little intervention until mid April before being drained and pressed. Our Pinot Noir has been aged in French Oak for 11 months before being filtered with fine earth. The oak adds structure and weight to our Pinot Noir without imparting overt woody tones. This gives our Pinot Noir a beautifully creamy, textual element.
