Technical Notes

Our Chardonnay grapes were hand-harvested in the Moutere by the St Pauli team and handled in barrel. To protect the delicate flavours the grapes were hand-picked early in the morning to avoid the increasing temperatures before being pressed and destemmed. Keeping the grapes cold helps retain important acidity and protects the delicate flavours, skins and pulp. Our Chardonnay has been aged in French oak (Barrique) for 11 months. The Taransaud barrel has an elegant, subtle influences on the wine by adding toasted oak tannin to the wine without suppressing the fruity characteristics. Our Chardonnay is filtered with fine earth.
