Our Pinot Gris grapes were hand-harvested in the Moutere by the St Pauli team and handled in tank. Grapes were hand-picked early in the morning to protect delicate flavours and kept in a cold store overnight before pressing and destemming. Keeping the grapes cold helps retain important acidity and protects the delicate flavours, skins and pulp. This wine was kept in tank for five months before being filtered with fine earth in preparation for bottling.
