Technical Notes
Hand-harvested in the Moutere by the St Pauli team and handled in tank. To protect the delicate flavours the grapes were hand-picked early in the morning and kept in a cold store overnight before pressing and destemming. Keeping the grapes cold helps retain important acidity and protects the delicate flavours, skins and pulp. This wine was filtered with fine earth 25/07/19 before being bottled in September.
